What do you need to make smoked mixed nuts and bolts?

If you have kids, you may have most of the cereal you need to make this great smoked mixed nuts and bolts recipe. If not, you may have to run to the store to pick up a box or two. The great thing is that you can substitute a few of the ingredients for other items that are similar.

The spices I use are fairly common, and you will likely have them in your pantry. Again though, you can make substitutions in the spices. Even tailor them to your specific tastes if you like.

  • Cheese bites
  • Fritos hoops
  • Butter
  • Celery salt
  • Garlic powder

  • Seasoning salt
  • Worcestershire sauce
  • Tabasco sauce

Start by preheating your smoker to 250 degrees F. You can use one large aluminum pan, but I sometimes find it a little easier to manage using 2 smaller pans.

Mix the nuts, pretzels, cereals, crackers, and Frito’s together in the pan. Then in a small microwavable bowl, melt the butter by microwaving it for 15 seconds at a time until it is completely melted.

Once the butter is melted, stir in the celery salt, garlic powder, onion powder, seasoning salt, Worcestershire sauce, and Tabasco sauce (or your favorite hot sauce). Pour the melted butter mixture over the cereal mixture and gently stir to coat.

Once your smoker is preheated, place the pan(s) in the smoker. I like to use hickory wood for these mixed nuts and bolts, but you could experiment with any type of smoking wood that you like.

Smoke the mixture for about 2 hours, stirring the pans every 30 minutes. Make sure that you replenish your smoking wood chips, pellets, or chunks if needed during the smoking process. You want to make sure that the pans get that smoky flavor.

Of course, you can make substitutions! Sometimes I find it difficult to find Frito’s hoops in our local grocer, so I use regular Fritos. You can add crunchy mini cheese sticks if you can’t find cheese bites.

Often times you can get different combinations of mixed nuts. Some come with pistachios (One of my personal favorites!) or macadamia nuts. It doesn’t really matter; use your favorite nuts, crackers, or chips. The results will be fabulous!

These mixed nuts and bolts are so good that they aren’t going to last very long. Put them out in small bowls around the house when you are having a party. Or in a couple of larger bowls if everyone is coming over to watch the big game. A word of warning, make sure you keep the rest of the stash handy. You are likely going to be filling the bowls up over and over again!

These smoked mixed nuts and bolts will store well in the freezer for about a month or so. The challenge is to get them into the freezer before they are all gone!

I usually divide my batch into 2 separate airtight storage containers. One I leave on the kitchen counter or in the pantry. The other I put away in the freezer as soon as they are out of the smoker and cooled down.

I find that if I leave the whole batch out, they disappear before I know it! Freezing them is also great because you can make a batch ahead of time and keep them in the freezer until the party! Just make sure that you take them out of the freezer and allow them to come up to room temperature before putting them out for your guests.

Ingredients

  • ½ of a 400 gram (14 oz.) package of pretzel sticks
  • 2 cups each of:
  • Mixed nuts
  • Cheerios cereal
  • Shreddies cereal
  • Life or Chex cereal
  • Cheese bites
  • Fritos hoops

Sauce

  • 2/3 cup butter, melted
  • 1 tsp celery salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp seasoning salt
  • ½ Tbsp Worcestershire sauce
  • 4-5 dashes of Tabasco sauce (or to taste)

Instructions

  • 1. Preheat your smoker to 250 degrees F.
  • 2. In a large roasting pan (or divide between 2 smaller pans), combine the first 7 ingredients.
  • 3. In a small microwavable bowl, melt the butter, heating for 15 - 20 seconds at a time until it is melted.
  • 4. Add the celery salt, garlic powder, onion powder, seasoning salt, Worcestershire sauce, and Tabasco sauce. Stir to combine.
  • 5. Pour the melted butter mixture over the pretzel mixture and gently toss or stir to coat the pretzel mixture.
  • 6. Place in the preheated smoker and smoke using hickory wood for about 2 hours, stirring the mixture every 30 minutes.
  • 7. Allow to cool completely; store in an air-tight container for up to a week. You can freeze the nuts and bolts for about a month. Remove from the freezer and allow to come to room temperature in a bowl before serving.
